Two Gallons, Two Ounces, One Word

An imperial gallon is 160 fluid ounces, not 128. A British recipe or a UK fuel figure using 'gallon' means 4.546 litres, 20% more than the American 3.785.
The imperial fluid ounce is 28.413 mL and the US one is 29.574 mL. So the UK gallon holds more ounces and each ounce is smaller — the two effects do not cancel.
Nutrition labels in the US use a rounded 30 mL ounce, which is neither the customary nor the imperial value. It exists only for labelling.
A US gallon of water weighs about 8.34 lb; an imperial gallon weighs exactly 10 lb by design. That 10 lb is where the imperial gallon came from.

Why a Gallon Is 231 Cubic Inches

The US gallon is defined as exactly 231 cubic inches, a number that looks arbitrary until you see where it comes from. It is the old English wine gallon, standardised under Queen Anne in 1707 as a cylinder seven inches across and six inches deep. Seven squared times pi over four times six comes to 230.9, which the statute rounded to 231 and fixed by law. When the United States broke away it kept that wine gallon, and it is still the legal definition today: 231 cubic inches, which works out to 3.785411784 litres exactly. Britain, meanwhile, threw the wine gallon out in 1824 and started over.

A Chain of Halvings

Everything below the gallon is a division by two or four. A gallon splits into 4 quarts, each quart into 2 pints, each pint into 2 cups, and each cup into 8 fluid ounces. Multiply it through and you get 4 × 2 × 2 × 8 = 128 fluid ounces per gallon. That structure is why the useful numbers are all powers of two times eight: 8, 16, 32, 64, 128. It also means you can do most kitchen and shop conversions by halving on your fingers, without ever touching the 231 or the 3.785 litres underneath.
