Three Ounces, One Word

The ounce on a kitchen scale is the avoirdupois ounce: exactly 28.349523125 grams since the 1959 international agreement.
Gold, silver and platinum are priced in TROY ounces — 31.1034768 g, about 9.7% heavier. A spot price quoted per ounce is never the kitchen one.
A fluid ounce is a volume, not a mass. US recipes mix both, and 8 fl oz of flour is nowhere near 8 oz of flour.
