The Cup That Is Not 236.588 mL

In 1988 the FDA fixed a 'legal cup' of exactly 240 millilitres for nutrition labelling, because round numbers make serving sizes readable. That cup is 1.44% larger than the customary one. Four legal cups come to 960 mL against the 946.35 mL of a real quart — a difference of about half a fluid ounce. For a soup or a stew that is invisible. For a brine, a sugar syrup, a curing solution or a bread dough at a fixed hydration, it is a measurable shift in concentration, and it compounds every time you scale the batch. When a number comes off a nutrition panel rather than a recipe, it is the 240 mL cup, and it should be converted before it is trusted.

Five Cups in Circulation

  • US customary: 236.588 mL — half a US pint, the basis of the 4-cups-per-quart rule and of every American measuring set.
